This project is the result of Pagliaro's collaboration with local farmers, who cultivate and make quality ancient grains made from sustainable farming systems available. The land where the wheat is cultivated is near our company. No fertilizers, fungicides and chemical products are used.

Pagliaro is an artisanal pasta maker that produces and sells pasta with ancient grains, specifically tagliatelle and fettuccine with egg. The artisanal production of pasta with ancient grains is made by stone grinding, with km 0 products.


Tagliatelle and fettuccine egg pasta are both made with ancient grains from the most recent harvest because it offers the best organoleptic and taste characteristics, allowing for the highest freshness and quality (this is a limited production pasta precisely because it is obtained from the grains from the most recent harvest).

The Ancient Grains Project also involves the artisanal production of egg fettuccine, made with ancient quality grains that are obtained from crops that follow sustainable farming systems.

This artisanal pasta is produced with grains of ancient varieties and stone grinded. Each product of the artisanal pasta maker Pagliaro is made with 100% MADE IN ITALY products.

Even the fettuccine proposed to customers (such as businesses, supermarkets, restaurants, grocery stores, wine shops, etc.) are limited production, since they are made with the grains from the most recent harvest.

Fettuccine and tagliatelle are the same: the more you eat them the better and more delicious they get.
